Its been almost a month since the A level physics exam so my memory is a bit meh.... But I am guessing its so that the alpha particles are allowed the opportunity to pass straight through with minimum interaction with the gold molecules, you know the thicker the foil the more gold nuclei hence more chance of deflection due to electrostatic forces as the alpha particle is passing through the foil.
